This fragrant, appetizing quiche is a lower-fat version than many but its flavor is outstanding.
The lively seasonal tastes of green spring onions, mild cheese, and fresh thyme make it a great choice for a light spring supper. Omega-3 oils, calcium, and beneficial anti-oxidants make it not only good but good for you. And using a store-bought crust makes it a cinch to make.
Frozen tart-shell, thawed
1 tablespoon butter
24 green onions, sliced into 1/2-inch pieces
2 cloves garlic, chopped
1/4 cup vegetable stock or water
1/4 pound fresh goat cheese
1/2 cup low-fat sour cream
2 eggs
1/2 teaspoon fresh thyme, chopped plus sprigs for garnish
salt and freshly-ground pepper, to taste
Preheat oven to 375F. In a large heavy-bottomed skillet, melt the butter over medium-high heat and add the onions, garlic, and stock, stirring to combine. Cover the skillet and reduce heat to low. Simmer about 15 minutes, until onions are softened.
In a bowl, mash together the goat cheese and sour cream until well-blended. Add eggs and thyme and stir to combine.
Take the lid off the skillet, turn heat up to high and cook about 3 minutes until liquid has evaporated. Add onion mixture to cheese mixture and season to taste with salt and pepper. Pour into tart shell.
Bake on top rack of oven 25-30 minutes, until a skewer inserted in the center comes out clean. Remove from oven and garnish with thyme sprigs. Allow to cool to warm. May be served warm or room temperature.
