Arugula & Blueberry Salad with Raspberry Vinaigrette

Yes, this salad is bursting with healthy antioxidants and omega oils, but it’s also bursting with flavor. Peppery arugula, sweet, tart berries, creamy avocado and savory walnuts are a magical combination

1 cup Blueberries
4 bunch Arugula
1 cup Walnuts
2 cups Avocados; cut into chunks
1/4 cup Walnut oil
1 tablespoon White wine vinegar
1 tablespoon Honey
1/4 cup Raspberries
Salt; to taste

In a large bowl, mix together blueberries, arugula, walnuts and avocado.

In a blender, combine walnut oil, vinegar, honey and raspberries until well-blended and smooth. Add salt to taste.

Drizzle raspberry dressing over salad, toss and serve.

Notes

The raspberry vinaigrette is amazing when made with walnut oil, but olive oil can be substituted if desired.
