These basic meatballs are gussied up with fresh basil and parsley. Serve over spaghetti with your favorite sauce and lots of freshly grated Parmesan cheese.
1 1/2 pounds lean ground beef
3/4 cup dry bread crumbs
2 large cloves garlic, crushed
1/4 cup chopped fresh basil
3 tablespoons chopped fresh parsley
1 large egg
1/2 teaspoon salt
1/4 teaspoon ground black pepper
3 tablespoons olive oil
In a large bowl combine beef, bread crumbs, garlic, basil, parsley, egg, salt and pepper. Mix gently but thoroughly. Shape into 1-inch balls.
Heat oil in a large skillet. Brown meatballs lightly on all sides; drain. Add to desired spaghetti sauce and thoroughly heat before serving.
makes 6 servings.
NOTE: Experiment with different fresh herbs such as oregano and thyme.
