Garlicky Lemon Scallops

This is a terrific way to fix ocean scallops! Simple treatment is always best with fine seafood, and this recipe really lets the flavor and texture of the scallops shine through. Served over brown rice with arugula, mushroom, strawberry and pecan salad.

1 tablespoon olive oil
1 1/4 lbs Scallops
2 tablespoons Flour
1 teaspoons Salt
1 each Scallion; finely chopped
1 each Lemon; juiced
2 tablespoons Parsley; chopped
4 cloves Garlic; minced

Heat oil in non-stick skillet.

Toss Scallops with flour & salt.

Place scallops, garlic, & scallion in skillet; saute until scallops are opaque, about 3 -4 minutes. Stir in lemon juice & parsley.
