Watermelon Gazpacho

A refreshing low-cal chilled soup. Diabetic friendly and delicious. Very nice and super easy.

4 cups Fresh watermelon; cubed, seeded
3 medium Tomatoes; chopped
1 small Cucumber; peeled and diced
3 large White & Green Scallions; chopped
1 medium Serrano chile; seeded, chopped
1/2 cup Yellow bell pepper; seeded & chopped
1/4 cup lime juice; about 3 Mexican limes
1/4 teaspoon Salt; to taste
1/2 teaspoon Black pepper; to taste
1/4 cup Cilantro; chopped

In a blender, combine ingredients. Adjust flavor with lime juice, salt & pepper. Chill for at least 4 hours. Serve app 3/4 cup portions as an appetizer. Garnish with basil, parsley, or cilantro as desired. Serve with Tapas style accompaniments i.e. crostini, grilled shrimp, or other small dishes.
