It takes a bit of time to oven roast the tomatoes but otherwise this recipe is really simple.
Very good, beautiful presentation. Great holiday appetizer. Wouldn’t recommend this as a passed hors d’oeuvre, though, as it is a little hard to eat while standing up. Grilled zucchini took 3-4 mins on medium on the grill.
3 roma tomatoes; cut in half
1 teaspoon olive oil
1 salt and pepper; to taste
1 zucchini; sliced thinly
6 basil leaves
2 ounces goat cheese
Toss the tomatoes in the oil, salt and pepper. Place the tomatoes cut side up on a baking pan. Bake the tomatoes in a preheated 325F oven for an hour. Grill the zucchini slices. Wrap the tomatoes, basil and goat cheese in the zucchini slices.
