Microwave Ratatouille

Ratatouille is a traditional French Provençal stewed vegetable dish, originating in Nice. Though referred to commonly as ratatouille niçoise, ratatouille is popular among the entire Mediterranean coast as an easy summer dish.



1 large onion, thinly sliced

2 zucchini, sliced

2 green peppers, cut into strips

1 small eggplant, peeled & cubed

3 ml garlic powder 3/4 tsp

1 ml salt 1/4 tsp

1 ml pepper 1/4 tsp

5 tomatoes, seeded & chopped



In a glass baking dish; combine onion, zucchini, pepper, eggplant and seasonings. Cover with plastic wrap, venting one corner. Microwave on high for 8 minutes. Stir in tomatoes; cover and microwave on high for 3 to 4 minutes, just until vegetables are tender crisp.



Serve with warm pita bread.
