This take on cheesecake brings practicality to the table in the form of a creamy bar made with apple pie filling and finished with a sea-salted caramel sauce to serve.
24 bars
Crust:
Non-stick cooking spray
4 cups graham cracker crumbs
1/3 cup unsalted butter, melted
3/4 cup granulated sugar
Filling:
2 lb. light cream cheese, softened
1 1/2 cups liquid egg
1 cup granulated sugar
1 tsp. sea salt
1 1/2 qt. LUCKY LEAF® Premium Apple Pie Filling
1 1/2 cups prepared caramel sauce
Coarse sea salt crystals
Preheat oven to 350ºF.
Coat 1 half-sheet pan with non-stick cooking spray.
In bowl, mix graham cracker crumbs, butter and sugar until crumbly. Press firmly into the bottom of the pan. Bake 10 minutes. Remove from heat and cool. Hold.
In a mixing bowl equipped with a paddle attachment, mix cream cheese, eggs, sugar and salt. Beat at medium high speed, until mixture is smooth, about 2 minutes. Fold Lucky Leaf® Apple Pie Filling into cheesecake mixture. Spoon cheesecake mixture onto prepared crust and spread evenly.
Bake 45-50 minutes, until filling is set. Remove from heat and let cool completely before cutting to serve. Cut into 24 equal portions. Cover and refrigerate, then let come to room temperature to serve.
To serve, drizzle each bar with 1 Tbsp. caramel sauce and sprinkle with a little coarse sea salt.
