Great with grilled meats or grilled fish.
1 15 ounce can black beans, rinsed and drained
1 medium tomato, finely chopped
1/2 cup chopped red pepper
1/4 cup chopped red onion
4 ounces can or jar, chopped green chilies
2 tablespoons vinegar
1 teaspoon balsamic vinegar
1/4 teaspoon salt
Combine all ingredients in a medium bowl; stir to blend. Cover and refrigerate until chilled, about 1 hour.
Makes 8 servings.
