3 cups light brown sugar
2 cups cider vinegar
1 tablespoon salt
3 lbs. prune plums, pitted and chopped
2 cups coarsely cut onion
2 cloves garlic, minced
1 green pepper, diced
1/4 teaspoon ginger
1/4 teaspoon cloves
1/4 teaspoon allspice
1/4 teaspoon cinnamon
1/2 teaspoon chili powder
1/2 cup raisins or currants, rinsed and drained.
Combine sugar, vinegar and salt in kettle, boil 3 minutes. Add remaining ingredients, simmer until fairly thick, about 1-1/2 hours. Ladle into sterilized jars, seal.
