Snapper Grilled in Foil with Cilantro, Tomato and Onion

2 lbs snapper fillet
1 small onion, thinly sliced
1 small tomato, diced
2 garlic cloves, minced
1 tablespoon chopped fresh cilantro
1 lemon, cut in half, one half cut in wedges
3 tablespoons white wine

Prepare coals in BBQ.

Take enough aluminum foil to wrap the fish fillet and lightly rub a butter stick over one side, using just enough to grease the foil lightly.

Place the fillet in the center of the foil. Spread the onion, tomato, garlic and cilantro on top of the fillet. Squeeze the juice from the lemon half over all, then sprinkle with the wine.

Roll the fish in the foil, sealing all edges, and grill for 15 to 20 minutes, or broil, 2 or 3 inches from the heat source for 10 or 12 minutes, until the fish is done. Serve with the fresh lemon wedges.
