1 can smoked oysters, drained (about 4 oz.)
1/4 cup lime juice
1/4 cup lemon juice
Dash cayenne pepper
Dash oregano
1/4 cup tomato, seeded and chopped
1/4 cup diced red pepper
1/4 cup diced green pepper
1 tablespoon chopped green onion
1 cup English cucumber, seeded and diced
1 tablespoon chopped parsley (or cilantro)
Salt and pepper to taste
Drain oysters, if large cut in half. In a small bowl combine lime and lemon juice, cayenne pepper and oregano. Add oysters and gently coat with marinade. Marinate at least 2-3 hours in the fridge. In bowl combine other ingredients. Keep well chilled.
About 1 hour before serving, drain oysters, add to vegetable mixture and toss gently. Return to fridge until serving time. Serve on crisp lettuce leaves.
