Monte Carlo Sandwich (Open-Faced Turkey and Ham) for 100

1-1/2 gallon Thousand Island Dressing
100 slices (6 lb 4 oz) ham, cooked
100 slices (6 lb 4 oz) turkey, cooked
4 lb. lettuce, fresh, trimmed
200 slices (10 lb) tomatoes, fresh, thinly sliced
24 eggs, hard cooked sliced
200 slices bacon, sliced, cooked, crisp
100 slices (6 lb) bread, pumpernickel or rye

Prepare 1-1/2 gallon “Thousand Island Dressing” recipe. Set aside. Slice ham and turkey into thin slices, about 16 per pound. For each sandwich: On 1 slice pumpernickel or rye bread, place lettuce leaf, 2 slices tomato, 1 slice ham, 1 slice turkey, 2 hard cooked egg slices, and 2 strips bacon. Just before serving, pour about 2 oz (1/4 cup) Thousand Island Dressing on top.

NOTE:
7 lb 8 oz canned ham will yield about 6 lb 4 oz cooked ham.

6 lb 4 oz turkey, boneless, frozen, cooked, or 9 lb 6 oz boneless, frozen, raw turkey may be used. Prepare according to “Roast Turkey” recipe.

5 lb 8 oz lettuce A.P. will yield 4 lb fresh, trimmed lettuce.

11 lb 4 oz fresh tomatoes A.P. will yield 10 lb sliced tomatoes.

12 lb sliced raw bacon will yield 200 slices cooked bacon. Prepare according to “Baked Bacon Slices” recipe.
