Crunchy Mandarin Cashew Salad

2 cups Romaine, or more
1 cup mushroom, sliced
1 red onion, sliced and separated into rings
1/2 to 3/4 cup cauliflower flowerettes
1 rib celery, sliced diagonally
1 can mandarin orange slices, well drained
1/2 cup cashews

Chill chopped vegetables. Add orange sections and cashews just before serving. Top with a good brand of Italian dressing.
