7 cups Black Beans, Dried
1 cup Bread Crumbs
1/2 cup Red Bell Pepper, Diced
1/4 cup Onion, Diced
8 Hamburger Buns, Whole Wheat
1 Egg
2 tablespoon Dried Cilantro
2 tablespoon Olive Oil
1 teaspoon Cayenne Pepper
Soak the black beans overnight. Rinse the beans well. In a pot, bring 14 cups of water to a boil. Add in the black beans and cook for about 20 minutes or until tender. Drain if necessary. Place the beans, onion, bell pepper, cayenne pepper, egg, bread crumbs and cilantro in a food processor.
Process the bean mixture. Add more bread crumbs if necessary to make the mixture dry enough to form patties. Shape into 8 or more patties. In a skillet, heat 1 tablespoon of olive oil over medium heat. Place four of the patties in the pan and cook for 2 minutes each side trying only to turn once. Add 1 tablespoon of olive oil to the pan each time you cook more patties. Patties may be make a day ahead. Refrigerate them until ready for use. This also allows them to set well.
