1 kg leeks, white & pale green parts only 2 lb
45 ml vegetable oil 3 tbsp
5 ml salt 1/2 tsp
125 ml apple cider 1/2 cup
5 ml paprika 1 tsp
15 ml parsley, chopped 1 tbsp
Place leeks in a large saucepan. Pour oil over leeks and heat gently for 7 to 8 minutes, turning frequently. Add salt and cider. Continue cooking for 15 minutes, basting occasionally with the liquid in the pan. Remove pan from heat; transfer leeks to a serving dish. Add paprika to liquid and pour over leeks. Set dish aside to cool. Serve cold as an appetizer with homemade bread.
