1/2 cup water
1/2 cup pineapple juice
1/4 cup white vinegar
1 tablespoon brown sugar
1/4 cup tomato sauce
1 tablespoon cornflour
1 tablespoon water
Place water, pineapple juice,vinegar, brown sugar and tomato sauce in a small saucepan. Mix cornflour and water to a smooth paste. Add to pan, stirring constantly over a medium heat until the sauce boils and thickens. Cool slightly before serving.
Serve with fish or chicken. Can be used as a dipping sauce for prawns and chicken nibbles. Good with baked chicken wings too.
