50g butter
125g sugar
2 eggs
175g SR flour
pinch of salt
3TBSP milk
Vanilla Essence
Very Cold Golden Syrup….
Beat together butter and sugar until well mixed. Add eggs, one at a time and beat until mixture is pale and fluffy. Add flour and salt gradually, alternating with milk and vanilla essence.
Quickly line a steamed pudding bowl with a thick layer of Golden syrup. Spoon batter into the the bowl and cover tightly with foil or lid. Place bowl in a large pot of simmering water (H20 SHOULD BE 3/4 UP THE BOWL) SIMMER PUDDING FOR 1-1/2 HOURS.
Make extra syrup for pouring – in a saucepan put golden syrup and butter & lemon juice – heat and mix.
