1 Baked 8 inch pie shell
1/4 cup Cold water
2 Egg yolks
1/2 cup Granulated sugar
1/2 cup Brown sugar, packed
1/4 cup All-purpose flour
1/4 teaspoon Salt
1 cup Boiling water
1 tablespoon Butter or
1/2 teaspoon Vanilla extract
3 Or 4 ripe bananas
1/2 cup Heavy cream
Early in day:
In saucepan, mix cold water with egg yolks; stir sugars, flour, and salt. Gradually add boiling water, stirring briskly. Cook, stirring, 3 to 5 min., or until smooth and thick. Add butter and vanilla; cool 5 min., stirring occasionally. Pour into baked pie shell. Refrigerate till serving time.
To serve:
Slice bananas over filling. Whip cream; spread over all.
