Serves: 6
Rice Salad:
1 cup rice
4 green onions, finely chopped
1 medium red pepper, finely chopped
310g can corn niblets, drained
450g can pineapple pieces, drained
1/3 cup sultanas
Add rice to large saucepan of boiling water, boil rapidly, uncovered, for about 12 minutes or until tender. Drain rice, rinse under cold water, drain well. Combine rice with remaining ingredients in large bowl, mix well.
Rice Salad Dressing:
1/3 cup oil
2 tablespoons white vinegar or lemon juice
1/4 teaspoon dry mustard
1/4 teaspoon sugar
Combine oil, vinegar, mustard and sugar in screwtop jar; shake well to combine ingredients. Add dressing to rice mixture, mix well.
