500g pork fillets
60g butter
1 onion, sliced
2 teaspoon curry powder
2 teaspoon grated ginger
2 tablespoon apricot jam
2 tablespoon soy sauce
1 tablespoon lemon juice
Melt butter in a pan, add onion, curry powder, ginger, jam, soy sauce and lemon juice. Stir over low heat until the jam has melted. Place pork in a greased shallow ovenproof casserole in a single layer, pour sauce over, bake uncovered in a moderate oven about 25 minutes or until pork is tender.
