30 ml butter
500 g lean pork, cut in cubes
2 ml paprika
10 ml salt
1 ml pepper
– dash sage –
1 clove garlic, minced
30 ml flour
3 onions, diced
4 large potatoes, cubed
2 apples, cored & chopped
30 ml dry sherry
375 ml chicken broth
In a heavy pot; melt butter. Add pork and brown. Add paprika, salt, pepper, sage and garlic, stirring well. Sprinkle with flour. Add onions, potatoes, apples, sherry and broth. Cover and simmer 40 minutes.
