Parsnips with Dijon Mustard Sauce

25 ml pure maple syrup 2 tbsp
5 ml dijon style mustard 1 tsp
25 ml butter, cut into bits 2 tbsp
2 large parsnips, julienned
salt & pepper to taste

In a microwave-safe shallow baking dish, combine syrup, mustard, butter, salt and pepper to taste. Add parsnips and toss to coat well. Microwave, covered partially, at high power (100%) for 10 minutes or until they are tender. Parsnips can also be simmered slowly in a saucepan over low heat until tender.
