DRESSING
125 ml vegetable oil 1/2 cup
45 ml red wine vinegar or balsamic vinegar 3 tbsp
15 ml lemon juice 1 tbsp
10 ml sugar 2 tsp
2 ml salt 1/2 tsp
2 ml dry mustard 1/2 tsp
1 garlic clove, crushed
SALAD
25 ml butter 2 tbsp
125 ml sunflower seeds, shelled 1/2 cup
125 ml almonds, slivered 1/2 cup
1 head green or red leaf lettuce, torn into bite size pieces
2 green onions, finely chopped
284mL can mandarin oranges, drained 1-10oz
1 ripe avocado, peeled & sliced
Combine dressing ingredients in a jar; shake to blend. Heat butter in frying pan and saute sunflower seeds and almonds until golden brown. Prepare remaining ingredients and place in salad bowl. Add cooled seeds and almonds. Toss with dressing just before serving.
