Makes 12 servings
3 lemons
1 fresh pear, medium sized, as ripe as possible
1 to 2 teaspoon granulated sugar replacement, or 1 packet or 2 teaspoons sugar
3 medium avocados, peeled, pitted and diced
3 cups pear nectar
pinch salt
Grate enough zest from lemons to measure 1 teaspoon. then squeeze the juice from the lemons and set aside. Peel, core and mince pear and transfer to a small bowl. Drizzle with a little lemon juice to keep the pear from turning brown. If the pear is not perfectly ripe, add up to the 2 teaspoons full of sugar substitute. Set aside. Place 1/4 cup of the lemon juice in the food processor. Add the avocado, lemon zest, pear nectar and salt. Puree until very smooth. Transfer mixture to an ice cream machine and freeze according to the manufacturers instructions. Stir in the pears just before it is finished. Store the sorbet tightly covered, in freezer. If you are going to serve it within a few hours, you can leave it in the freezer until serving time. However, if you are going to freeze the sorbet for longer and it gets quite solid, let it soften in the refrigerator for about an hour before you plan to serve it.
