Low Fat Apple Cinnamon Whole Wheat Pancakes

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 tablespoon granulated sugar
1-1/2 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon baking soda
1 egg, lightly beaten
1 cup low-fat milk
1/2 cup grated peeled apple
1 tablespoon vegetable oil
1/2 teaspoon butter or soft margarine

In bowl, combine flours, sugar, baking powder, cinnamon and baking soda. In another bowl, combine egg, milk, apple and oil. Pour into flour mixture and stir until just combined.

Heat nonstick skillet over medium heat until hot. Add butter or margarine to lightly grease. Pour in batter, 1/4 cup for each pancake, and cook until bubbles form on surface and underside is golden brown. Turn and took until bottom is lightly browned.

Makes 3 servings of 3 pancakes each.

NOTE:
Top with yogurt mixed with brown sugar or maple syrup.
