3 slices bacon, finely chopped
4 large potatoes, peeled & julienned
250 ml water 1 cup
3 green onions, finely chopped
25 ml fresh parsley, chopped 2 tbsp
2 ml salt 1/2 tsp
1 ml pepper 1/4 tsp
In large skillet, cook bacon until almost crisp. Add potatoes, water, onion, parsley, salt and pepper. Cook uncovered over medium heat, stirring frequently for 25 minutes or until potatoes are tender and water has evaporated. Add more water if needed during cooking time.
