Hot and Sour Scallop and Shrimp Soup

1 lb. scallops
1 lb. shrimps, diced
6 cup chicken stock
2 cloves garlic
4 lime leaves
2 stalks lemongrass
1 can straw mushrooms
2 jalapeños
2 tablespoon Thai fish sauce
1 teaspoon crushed red pepper
1/3 cup chopped mint leaves
6 scallions, finely chopped
Salt and pepper to taste

In a pot combine chicken stock, garlic, lime leaves, lemongrass, fish sauce and crushed peppers to boil for a few minutes. Then add scallops, shrimps, straw mushrooms, jalapeños and salt and pepper to taste. Let boil and add the fresh mint and scallions. Adjust seasoning again. Serve immediately.
