Gulf Coast Beer Battered Shrimp

1 can Beer of Choice
3 each Eggs
1 tbs. Salt
2 tbs. Black or cayenne pepper
3 cups Flour
1 lb. Large Shrimp

Peel, devein and butterfly shrimp. Mix chilled beer, eggs, salt and pepper and beat well. Put shrimp in mixture and let stand five minutes. Remove shrimp one at a time from beer mixture and roll in flour. Deep fry in hot oil between 375 and 400 degrees F. for about five minutes or until golden brown and floating.
