Grilled Salmon Steaks with a Choice of Sauces

4 each (6 oz) salmon steaks
1 clove garlic; split
salt and pepper
oil

SOUR CREAM SAUCE
1 pint sour cream
1/2 cup green onion; chopped
1 medium cucumber; finely chopped

LEMON PARSLEY BUTTER
1 tablespoon parsley; finely minced
2 tablespoons melted butter
2 tablespoons lemon juice
3 sprigs parsley

Marinate salmon steaks in oil seasoned with garlic salt, pepper and salt for about one hour. Place steaks on well-oiled grill. Cook about 4 inches from moderately hot coals for 8 minutes. Turn and cook 7 to 10 minutes longer. Serve with Sour Cream Sauce and/or Lemon Parsley Butter.

Sour Cream Sauce:
Combine all ingredients, chill and serve with Grilled Salmon Steaks.

Lemon Parsley Butter:
Place Grilled Salmon Steaks on serving platter. Sprinkle with minced parsley. Pour melted butter, then lemon juice overall. Garnish with sprigs of parsley and serve.
