2 cups flour
3 teaspoons baking powder
3/4 teaspoon salt
2 tablespoons sugar
1-1/2 cup milk
6 tablespoons oil
2 eggs
Mix dry ingredients together and set aside. Separate egg yolks from egg whites and place in bowls. Beat egg whites until they peak and set aside. Add milk and oil to egg yolks and mix well. Add dry ingredients to milk mixture and stir until mixed. Lightly fold beaten egg whites into dry/milk mixture.
Spray waffle iron with grease or brush with butter. When hot, pour one cup of waffle mixture onto waffle iron and cook recommended amount of time for waffle iron.
Wild Strawberry Syrup:
1 cup crushed wild strawberries (or fruit of choice)
2 cups sugar
In medium saucepan, add fruit. Bring to boil, reduce heat, add sugar and stir over low heat until sugar is completely dissolved, about 2-3 minutes. Makes about 1-1/2 cups. Pour into serving container and serve with waffles garnished with strawberries.
