Make this a new breakfast favorite at your home; the cinnamon syrup makes it a winner.
1/2 cup granulated sugar
1/4 cup dark corn syrup
1/4 teaspoon ground cinnamon
1/4 cup water
1/4 cup evaporated milk
1 large egg
2 large egg whites
3/4 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/8 teaspoon baking powder
8 slices of white bread
1 teaspoon vegetable oil
1 teaspoon butter
For the cinnamon syrup:
Combine first addition of sugar, dark corn syrup, first addition of cinnamon and water in a small saucepan, stirring until well-mixed. Bring the mixture to a boil over medium-high heat, stirring constantly. Boil for 2 minutes, then remove from heat and stir in evaporated milk; set aside.
For the French toast:
In a medium bowl, whisk together egg, egg whites, milk, remaining sugar, vanilla, remaining cinnamon and baking powder. Place slices of white bread in a shallow bowl and pour egg mixture on top, covering evenly. Heat oil and butter in a non-stick skillet over medium-high heat until butter is melted and foaming slightly. Cook French toast 2 or 3 slices at a time until brown, 2 or 3 minutes, turning once to brown both sides. Serve warm with cinnamon syrup.
