1-1/2 pounds ground turkey
1/2 cup cream of wheat cereal (1-minute, 2 1/2-minute or 10-minute stovetop cooking)
1/2 cup egg substitute
1/2 cup ketchup
1 clove garlic, minced
1 teaspoon dried basil leaves
1 (10-ounce) package chopped spinach, thawed and well drained
1/2 cup chopped red bell pepper
1/4 cup minced onion
1 tablespoon dijon mustard
1 tablespoon honey
Blend turkey, cereal, egg substitute, ketchup, garlic and basil; mix in spinach, pepper and onion. Shape turkey mixture into 9 x 4-inch loaf; place in greased 13 x 9 x 2-inch baking pan. Bake at 350 F for 45 minutes. Blend mustard and honey; brush on meatloaf. Bake 25 to 35 minutes more or until done (internal temperature reaches 1650F). Let stand 10 minutes.
