Crepe Cake with Ricotta and Candied Fruit

2 cups ricotta
3/4 cup assorted candied fruit
12 basic sweet crepes
1/3 cup honey
confectioners’ sugar for dusting

In a bowl, mix the ricotta with the candied fruit. Spread the mixture on all but 1 crepe, and layer them in a stack, finishing with the plain crepe. Drizzle the honey on top so that it drips over the edges of the layers, and sprinkle with confectioners’ sugar. Slice as you would a cake, and serve.
