Cold Tomato Veggie Soup

1 litre tomato juice
2 large tomatoes, finely chopped
2 medium cucumbers, finely chopped
2 cloves garlic, minced
1 large green pepper, seeded & finely chopped
50 ml fresh parsley, chopped
5 ml lemon juice

In large bowl, combine all ingredients until well mixed. Cover and refrigerate at least 2 hours.

Serves 6
