Citrus Macaroni Salad

6 oranges
500 g macaroni, cooked & cooled 1 lb
4 chicken breasts, cooked, cubed & cooled
125 ml red grapes, halved 1/2 cup
125 ml green grapes, halved 1/2 cup
1 cucumber, cut into small cubes
6 green onion, finely chopped
125 ml vegetable oil 1/2 cup
50 ml red wine vinegar 1/4 cup
125 ml concentrated orange juice 1/2 cup
1 juice & zest of lemon
50 ml fresh parsley, chopped 1/4 cup
salt & pepper to taste

Wash oranges and grate 1 or 2 for zest. Peel and section orange.
In large bowl; mix together macaroni, chicken, grapes, cucumber and onion.

In small bowl; blend oil, vinegar, orange and lemon juice, orange zest, parsley, salt and pepper.

Add vinaigrette to macaroni mixture and toss gently. Add orange sections and mix gently. Refrigerate until ready to serve.
