1 cup lightly packed cilantro sprigs
1 green onion
1 jalapeño chile
1 teaspoon fresh lemon juice
1/2 teaspoon sugar
1/2 teaspoon fresh ginger
1/4 teaspoon salt
In blender, combine 1/4 cup water; 1 cup lightly packed fresh cilantro sprigs; 1 green onion, chopped; 1 jal;apeno chile, seeded if desired and chopped; 1 teaspoon fresh lemon juice; 1/2 teaspoon sugar; 1/2 teaspoon fresh ginger, minced and peeled; and 1/4 teaspoon salt. Blend until smooth. Transfer to small bowl and refrigerate until serving time.
Makes about 1/2 cup.
