Chili Roasted Pork Tenderloin

Serves 4

1/4 cup mustard
1 tablespoon molasses
2 cloves chopped garlic
4 tsps chili powder
2 10oz pork tenderloins
2 tablespoon chopped parsley
2 tablespoon chopped cilantro

Whisk together, mustard, molasses, garlic and chili powder. Place pork in a baking dish. Pour mustard mix over pork, coating well. Put in refrigerator and marinate for 3-4 hours.

Preheat oven to 400 deg. Place pork on rack in roasting pan and season with salt and pepper. Sprinkle on the parsley and cilantro, pat to adhere to meat. Roast 20-25 minutes. Cover loosely with foil, let stand 10 minutes before slicing. Serve with white rice and baked beans.
