750 g potatoes, cubed 1 1/2 lb
25 ml butter 2 tbsp
1 large onion, coarsely chopped
1 green pepper, cubed
1 red pepper, cubed
375 ml cheddar cheese, shredded 1 1/2 cup
25 ml fresh parsley, chopped 2 tbsp
Cook potatoes in boiling water for 5 minutes. Drain well. Melt butter in large non-stick frying pan. Add potatoes and onions to pan and cook over medium high heat, stirring frequently until potatoes start to turn golden; about 5 minutes. Add peppers to pan and continue cooking and stirring until peppers are almost tender; about 5 minutes. Add salt and pepper to taste. Fold cheddar cheese into the potato mixture and spoon into serving bowl. Cover and let stand for 2 minutes or until cheese is melted. Serve immediately; garnish with fresh parsley.
