1 kg red ptoatoes, peeled & quartered 2 lb
375 ml cheddar cheese, shredded 1 1/2 cup
125 ml milk 1/2 cup
125 ml butter or margarine 1/2 cup
50 ml green onions, sliced 1/4 cup
3 slices bacon, cooked crisp & chopped
In a large saucepan; cook potatoes covered with water. Bring to boil over medium-high heat. Reduce heat to medium-low. Cover and simmer for 25 minutes or until potatoes are tender. Drain.
In a large bowl; place potatoes. Add cheese, milk and butter. Beat with electric mixer on medium speed until mixture is smooth. Stir in onions and bacon.
