A 450 g can of mango slices may be substituted for the fresh mango in this recipe.
4 single chicken breast fillets
120 g spinach, shredded finely
1 medium red onion, chopped finely
1 medium mango, chopped finely
1 tablespoon coarsely chopped fresh mint leaves
1/4 cup flaked parmesan cheese
1/4 cup sweet chilli sauce
Cook chicken on heated oiled griddle (or grill or barbecue) until browned both sides and cooked through.
Meanwhile, combine spinach, onion, mango, mint, cheese and sauce in medium bowl; mix well.
Serve chicken topped with salsa.
