Cauliflower Salad with Green Onion Dressing

1 head cauliflower, cut into florets
1 small yellow zucchini, halved lengthwise & thinly sliced
1 large red, yellow or green sweet pepper, cut into bite-size strips
250 ml radishes, sliced 1 cup
250 ml fresh or frozen peas 1 cup

GREEN ONION DRESSING
125 ml green onions, coarsely chopped 1/2 cup
50 ml mayonnaise 1/4 cup
15 ml dijon mustard 1 tbsp
1 ml pepper 1/4 tsp
1 clove garlic halved
250 ml plain yogurt 1 cup

Pour boiling water over cauliflower and let stand 10 minutes. Rinse with cold water and drain well. Combine cauliflower, zucchini, sweet pepper strips, radishes and peas in a large bowl. Pour Green Onion Dressing over vegetables. Toss lightly to coat. Cover and chill for 4 to 12 hours.

GREEN ONION DRESSING:
Combine green onions, mayonnaise, dijon mustard, pepper and garlic in a blender or food processor. Cover and blend or process until onion is finely chopped. Transfer the dressing to a small bowl. Stir in yogurt. Cover and store in the refrigerator for up to 1 week.
