Broccoli Corn Bread

Provided in the updated “Fix It and Forget-It Cookbook”. This recipe is from Winfred Ewy, Newton, KS. Serve like spoon bread, or invert the pot, remove bread, and cut into wedges.

Makes 8 servings

1 stick margarine, melted
10-oz pkg. chopped broccoli, cooked and drained
1 onion, chopped
1 box corn bread mix
4 eggs, well beaten
8 oz. cottage cheese
1-1/4 tsp. salt

Combine all ingredients. Mix well.

Pour into greased slow cooker. Cook on Low 6 hours, or until toothpick inserted in center comes out clean.
