Known as black and blue burgers, this is a simple, classic steakhouse combo that will send fans of these flavors wild. Serve them with roasted potatoes and a green salad.
1-1/2 to 1-3/4 pounds ground beef
1/4 to 1/2 cup blue cheese (any kind)
3 to 4 tablespoons coarsely ground black pepper
1 teaspoon kosher salt
Divide the beef into 4 portions. Divide each portion into 2 disks and place 1 to 2 tablespoons of blue cheese on half of the disks. Top each with another disk. Tightly pinch the edges and form each into a patty.
Place the pepper and salt on a plate and mix to combine. Dredge the patties lightly in the mixture.
Place a large skillet over medium-high heat. When it gets very hot, add the burgers one at a time, allowing the pan to reheat between additions.
Cook until almost black, about 3 to 5 minutes on each side. Serve immediately.
