3 slices bacon(or 2 oz. salt pork), coarsely chopped
1 onion, chopped
1 tsp. thyme
2 potatoes, in 1/2 inch cubes
3 cups water
1 cup heavy cream
13 oz. canned minced clams, undrained (or fresh clams, chopped)
Serves 4
Cook bacon or salt pork in a saucepan over medium heat 4-5 minutes, stirring frequently. Remove with a slotted spoon and drain on paper towels. Discard all but 2 Tbs. drippings from pan. Add onion and thyme and sauté 2-3 minutes, until onion is softened. Add potatoes and water. Bring to a boil over high heat. Cover pan, reduce heat to medium and cook 10-12 minutes, until potatoes are softened. Stir in clams and cream. Season with salt and pepper to taste. Cook about 1 minute, until just heated through. Serve sprinkled with bacon.
