Grilled Chicken with Italian Salsa

This dish tastes like summer!

Salsa
1 1/2 cups Tomatoes; chopped
1/2 cup Fresh basil; chopped
1 tablespoon Orange juice concentrate; thawed
1/2 teaspoon sea salt
1/2 teaspoon Fresh garlic, peeled
1/2 teaspoon Balsamic Vinegar
1/4 teaspoon Black pepper

Chicken Marinade
1 tablespoon Fresh oregano; chopped
2 tablespoon Fresh lemon juice
2 tablespoon Balsamic Vinegar
1 tablespoon Olive oil
1 tablespoon Dijon mustard
1 teaspoon Fresh rosemary; chopped
1 teaspoon Fresh parsley; chopped
1/2 teaspoon Garlic powder
1/2 teaspoon fresh thyme; chopped
1/2 teaspoon Ground black pepper
1/4 teaspoon Salt

4 boneless chicken breasts

Mix salsa ingredients together. Let sit at least one hour, but tastes much better if you give the flavors time to combine overnight.

Mix chicken marinade ingredients, marinade chicken for at least an hour, or overnight.

Grill chicken on the BBQ or under the broiler on high in the oven. 7-10 mins each side depending on thickness of the chicken.

Notes

Can use dried spices in the chicken marinade, but use fresh for the salsa. This salsa is fantastic on just about anything – salads, crackers, meats, chips, etc.
