Dressing:
2 T red wine vinegar
2 tsp Dijon mustard
1 tsp olive oil
1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp crushed red pepper
2 minced garlic cloves
Salad:
3 cups cucumber
2 cups halved cherry tomatoes
1 cup yellow bell pepper; chopped
1/2 cup red onion finely; chopped
1/4 c kalamata olives
Whisk dressing ingredients together. Combine salad ingredients and mix with dressing. Can be prepared ahead of time.
