1 green bell pepper, seeded and diced
4 tomatoes, seeded and chopped
1 onion, chopped
3 garlic cloves, crushed
3 cups water
1/4 cup dry white wine
3 teaspoons fresh lemon juice
1 green onion, chopped
In a blender or food processor, puree diced green bell pepper, chopped tomatoes, chopped onion, crushed garlic cloves, water, white wine, and lemon juice. Strain, discarding any large solids. Chill overnight.
Serve in chilled bowls with chopped green onion sprinkled on top, divided.
