White Gravy for 10, 50 or 100

Pan Drippings or Oil Cups 1/4 1-1/4  2-1/2 
Salt Teaspoons 1/2  2-1/2  5
Pepper Teaspoons 1/4 1 1
Milk Cups 2 10 20

In large heavy pan over medium heat combine drippings or oil, and flour, salt and pepper. Stir until flour begins to brown, add milk. Continue to cook until mixture begins to boil, stirring and scraping bottom of pan constantly to prevent scorching. Serve over mashed potatoes, biscuits or hot rolls.
