Vegetable Burrito

1/2 cup carrots, shredded
1/2 cup broccoli, chopped
1/2 cup cauliflower, chopped
2 green onions, thinly sliced
1 cup cheddar cheese, shredded
1/4 cup ranch flavoured salad dressing
1/2 teaspoon chili powder
4 tortillas
1 cup lettuce, torn into small pieces

In a medium mixing bowl; combine carrots, broccoli, cauliflower and onions. Add cheese, dressing and chili powder.

Lay tortilla flat on counter and spoon about 1/2 cup vegetable mixture and 1/4 cup of lettuce down the centre. Wrap each tortilla around the vegetable mixture.

Serves 4
